Toast with avocado cream, pan-fried prawns and Timut pepper
Ingredients for 4 people:
8 slices of bread
The juice of half a lime
Extra virgin olive oil
Clean the prawns, removing their heads, shells and the black filament inside. Peel the avocado and put it in a mixer together with the lime juice, a pinch of salt and some olive oil. If you wish, you may also add a small piece of red
Tropea onion. Blend these ingredients together until you obtain a slightly chunky cream. Heat a non-stick frying pan, very lightly coated with olive oil. When it is good and hot, cook the prawns in it.
Crush a handful of Timut pepper and sprinkle it over the hot prawns. Take the bread and toast it in a hot frying pan. Spread on each slice a tablespoon of the avocado sauce and add the pan-fried prawns.
