Greek rice salad

Ingredients for 4 people:

300 g of long-grain rice (for salads)

250 g of Feta cheese

100 g of Greek olives

One red Tropea onion

One tablespoon of dried wild oregano

Extra virgin olive oil


Cooking instructions:

Cook the rice, adding just a very little salt; in the meantime, prepare the seasonings. Slice the onion very thinly and dice the Feta cheese, in cubes about one centimeter in diameter. Put these ingredients in a salad bowl and add the olives and oregano.

When the rice is cooked, cool it rapidly with cold water, drain it well and add it to the seasonings. Add a drizzle of olive oil and stir all the ingredients together.

Leave the salad to rest for an hour before serving.
