Sweet potato chips with vegan mayonnaise
Ingredients for 4-6:
2 sweet potatoes
1l peanut oil
For the vegan mayonnaise:
150 g rice or peanut oil
75 g soy milk
1 tablespoon of lime (or lemon) juice
½ teaspoon of garlic powder
A pinch of salt
Peel the potatoes and cut them into thin slices with a mandoline. Soak the potatoes in a bowl of cold water for 10 minutes, then take them out and dry them with a cloth.
Heat the peanut oil in a large pan and fry a few potato chips at a time at a moderate temperature, between 130° - 140°. When they are ready, place them on some absorbent paper to dry.
Pour all the ingredients required to make the mayonnaise in a hand blender beaker and blend for a few seconds at medium speed until the mixture thickens.
Put the mayonnaise in a small bowl and sprinkle with chopped chives. Sprinkle some salt on the sweet potato chips and serve.
