Watermelon and raw scampi tidbits

Ingredients for 4 people:

A large slice of watermelon

4 very fresh scampi

The juice of 1 lemon

Extra virgin olive oil

Black pepper

Fresh mint


Prepare an emulsion with the lemon juice and just a little olive oil.

Clean the scampi, removing the shells. Leave the flesh of the scampi in the emulsion for one minute, just the time needed to cut the watermelon into cubes (about 2 cm per side). Drain and lay each scampi on top of a cube of watermelon.

Add some black pepper, decorate with a few mint leaves and serve, accompanied by a glass of well chilled Prosecco 52.
