200 grams pure chocolate
1 tbsp. sugar
oil for frying
puff pastry
use the standard recipe for puff pastry
garnish
icing sugar
pulverized chocolate

After preparing and rolling out the puff pastry, cut it into squares like ravioli. Fill each square with the cream made in the following way. Pass the ricotta through a sieve and flavor it with the sugar and chocolate grated in scales. Fold the pastry over on itself as in making cappelletti. Fry them in abundant oil. Garnish the ravioli with a sprinkle of icing sugar and pulverized chocolate. These ravioli can be served hot or warm.
