
4 chicken breasts
1 Reinette apple
1 sprig rosemary
Grana cheese
mixed salad greens
white wine
oregano
extra virgin olive oil
balsamic vinegar
pomegranate seeds
salt

Baste the chicken breasts with a little white wine. Salt them, sprinkle over rosemary leaves and cover the breasts with ovenproof paper. Roast the chicken breasts but see that they do not overcook. Arrange mixed greens on a large serving platter along with the thinly sliced Reinette apple and slivers of Grana cheese. Let the breasts cool to room temperature, cut them thin with a slicer and arrange atop the salad. Sprinkle with pomegranate seeds and baste with a dressing consisting of extra virgin olive oil, oregano and a few drops of balsamic vinegar. Accompany with slices of toast.

The wine features a dark straw yellow color. The intense bouquet is pleasantly fruity and flowery with notes of Golden apples and yellow fruit against a genteel boisé background. On the palate, it is warm and fat with a good structure and an agreeable balance between freshness and softness. The wine shows excellent persistence on the palate and the succession of aromas is in keeping with the sensations registered by the nose. This is a Pinot Grigio that can evolve toward more complex tones of fruit and dried flowers when laid down in the bottle for an extended period.
