he date palm tree is one of the most ancient cultivated plants and its fruits are also called "bread of the desert" as they have been the source of nourishment for nomad tribes for more than five thousand years. Dry dates, on the other hand, have a broader market in Arab countries where they are eaten in pies.


   Date Delight

200 g./7 oz. fresh stoned dates - 200 g./7 oz. chopped walnuts - 2 egg yolks - 150 g./5 oz. icing sugar in powder - 1 tablespoon of cocoa powder - juice of 1 lemon - pastry wafers.


Cut dates into small pieces and add walnuts, mix with egg white, sugar, cocoa and lemon juice. Work in all these ingredients thoroughly. With a tablespoon form small balls and place on wafers. Cook in a hot oven at 150/175° for 25/30'.
