The mild September climate, the wash of gold and red that autumn gives the woods should be enjoyed in the mountains where the season's colors match the pleasures of the table.

   Farmhouse pies with speck

8 slices wholemeal bread - 16 slices speck - 150g./5 oz. soncino - butter - extra-virgin olive oil - lemon juice - salt and pepper


Spread slices of bread with butter, remove crust and cut into half. Wash salad, dress with oil, lemon, salt and pepper, divide into bunches and wrap in a slice of speck. Arrange on a slice of wholemeal bread and serve immediately.

N.B. Ingredients are given for 4 portions.
