
8 slices wholemeal bread - 16 slices speck - 150g./5 oz. soncino - butter - extra-virgin olive oil - lemon juice - salt and pepper

Spread slices of bread with butter, remove crust and cut into half. Wash salad, dress with oil, lemon, salt and pepper, divide into bunches and wrap in a slice of speck. Arrange on a slice of wholemeal bread and serve immediately.
