
250 g./9 oz. superior quality flour
- vanillina - 200 g./7 oz. sugar - 1 lemon - salt - 4 eggs -
pinch yeast - 100 g./31/2 oz. butter - 1 kg./2 lb. 3 oz. black
and white grapes - 200 g./7 oz. cream - 2 tbsp. potato flour

Mix flour, beaten eggs, melted
butter, 2 tbsp. sugar, yeast, grated zest of 1/2 lemon and a
pinch of salt into a stiff dough, mix quickly and turn into
a ball shape and place in a cloth. Prepare a cream, by beating
2 egg yolks with remaining sugar, incorporate potato flour and
dilute with cream; add flavor with vanilla and add 2 stiffly
beaten egg whites. Place cream over flame, stirring gently and
bring to boil. Roll out dough, line an expandable cake tin greased
and line with grated bread; pour in grapes, cover with cream
and bake for 40'-45' at 180°.
