Recipes for the Whole Year



September is the month that marks the start of the harvest, the great time when grapes are ripe for picking. Many of autumn's dishes are based on grapes which, according to Gioacchino Rossini, are merely wine in pills. Grapes in the month of September feature prominently in food and not just drink.

   Soft grape pudding

250 g./9 oz. superior quality flour - vanillina - 200 g./7 oz. sugar - 1 lemon - salt - 4 eggs - pinch yeast - 100 g./31/2 oz. butter - 1 kg./2 lb. 3 oz. black and white grapes - 200 g./7 oz. cream - 2 tbsp. potato flour


Mix flour, beaten eggs, melted butter, 2 tbsp. sugar, yeast, grated zest of 1/2 lemon and a pinch of salt into a stiff dough, mix quickly and turn into a ball shape and place in a cloth. Prepare a cream, by beating 2 egg yolks with remaining sugar, incorporate potato flour and dilute with cream; add flavor with vanilla and add 2 stiffly beaten egg whites. Place cream over flame, stirring gently and bring to boil. Roll out dough, line an expandable cake tin greased and line with grated bread; pour in grapes, cover with cream and bake for 40'-45' at 180°.
