Recipes for the Whole Year



This special menu has a common ingredient, cheese. For thousands of years this has been one of the staples in man's diet and part of his culture (Polyphemus, the Cyclops in the Odyssey was a shepherd). With its many varieties, it symbolizes the lifestyle of peoples, their ethnic differences and the variety in the geographical areas of production, like wine.

    Ricotta pudding

400 g./ 3/4 lb. Ricotta cheese - 2 whole eggs - 140 g./5 oz. sugar - 50 g./1 1/2 oz. Amaretti biscuits - 1 cup Cognac - cinnamon.


Using a fork beat Ricotta in a bowl, add crumbled Amaretti biscuits, sugar, Cognac and eggs until a creamy mix is obtained. Line a tin with butter, sprinkle with flour, pour in mixture and bake in oven heated to 200° for 40 minutes.

N.B. Ingredients are given for 4 portions.
