This special menu has a common
ingredient, cheese. For thousands of years this has been one
of the staples in man's diet and part of his culture (Polyphemus,
the Cyclops in the Odyssey was a shepherd). With its many varieties,
it symbolizes the lifestyle of peoples, their ethnic differences
and the variety in the geographical areas of production, like
wine.

400 g./ 3/4 lb. linguine - 100 g./ 3 1/2 oz. grated Pecorino (Italian cheddar) cheese - 50 g./1 1/2 oz. butter - Tuscan extra virgin olive oil - chopped parsley - salt - pepper

Heat oil in a pan and slowly melt Pecorino over a low flame; cook the pasta until it is al dente, drain and pour into pan, mixing with Pecorino. Place butter on the bottom of soup tureen, pour on the pasta, add freshly ground pepper and chopped parsley. Serve hot.
