This special menu has a common
ingredient, cheese. For thousands of years this has been one
of the staples in man's diet and part of his culture (Polyphemus,
the Cyclops in the Odyssey was a shepherd). With its many varieties,
it symbolizes the lifestyle of peoples, their ethnic differences
and the variety in the geographical areas of production, like
wine.

Gruyère
croissants |  |

Mini-croissants - 1 cup milk -
150 g. grated Gruyère cheese

Cut croissants in half lengthwise
(frozen croissants to be cooked in oven can be used); remove
inside crumbs and place them in a tureen; add hot milk and grated
Gruyère, mixing to obtain a soft consistency. Fill the
croissants with the above cream you have obtained, close them
and place in a hot oven (180°) for 10 minutes; serve hot.

Santa Margherita
Rosé wine from Veneto Merlot and Cabernet vines. Pinkish color with orange notes; subtle bouquet.
Serve at:
10°-12° C.
