
2 medium-sized potatoes - 2 medium-sized zucchini - 50 g./2 oz. grated Emmenthal cheese - 2 eggs - 2 tbsp. oil - 20 g./2 oz. butter

Grate potatoes and zucchini then remove liquid from zucchini by squashing them between two plates. Place vegetables in a bowl and add grated cheese, eggs and salt.
In a pan, heat oil and butter. With vegetable mixture, make round fritters and fry over medium flame, turning frequently until they turn golden on both sides. Serve warm.
