Recipes for the Whole Year



The days are now long and hot and nothing could be more pleasant than a weekend spent in the forests and mountains, where the wild summer tastes of mushrooms, forest fruits and cheese can be sampled.

   Vegetable fritters

2 medium-sized potatoes - 2 medium-sized zucchini - 50 g./2 oz. grated Emmenthal cheese - 2 eggs - 2 tbsp. oil - 20 g./2 oz. butter


Grate potatoes and zucchini then remove liquid from zucchini by squashing them between two plates. Place vegetables in a bowl and add grated cheese, eggs and salt. In a pan, heat oil and butter. With vegetable mixture, make round fritters and fry over medium flame, turning frequently until they turn golden on both sides. Serve warm.

N.B. Ingredients are given for 4 portions.

Santa Margherita


Pale straw yellow color with green overtones. Nose clean and intense, typically aromatic with hints of green apple. The taste is balanced and pleasantly aromatic, with good personality and lingering aftertaste.

Serve at:
8°-10° C.
