Recipes for the Whole Year



The 4th July, the day of American independence, is celebrated in the US with picnics and fireworks. The week's menu had to include some open-air dishes, with rolled sandwiches and that great American traditional dish, turkey.

Rolled sandwiches Peach cream


   Peach cream

1 kg./2 lb. 3 oz. ripe peaches - 1/3 l./1/3 pt. milk - 1/3 l./1/3 pt. cream - 200 g./7 oz. sugar cane


In a small pan, bring milk to boil, turn out and dissolve sugar. Wash peaches, peel and blend. When the sugared milk is cold, mix in peach purée, whipped cream and pour mixture into a mold, stirring properly. Place mold in freezer and served frozen with slices of peach.

N.B. Ingredients are given for 4 portions.

Sparkling wine with ultra-fine perlage and delicate bouquet, notes of acacia honey and lemon herb.

Serve at:
8°-10° C.
