This is the coldest week of the
year, and the three last days of the month, known as "the days
of the blackbird", are according to folklore the very coldest.
According to a folk legend once upon a time blackbirds were white. At the end of January, seeking respite from the cold a female blackbird took refuge for three days in a chimney.
She survived the intense cold but her feathers turned black because of the smoke; since then blackbirds are black.

Cooked cream
with rum |  |

2 dl. fresh cream - 7 cl. milk - 3 egg yolks - 25 g./1 oz. sugar - 1 piece of vanilla - 2 tbsp. Rum - cinnamon and cocoa powder

In a casserole bring the milk to boil with the vanilla. Remove from flame, leave to cool and filter with a strainer. Vigorously whip the yolks and sugar (use electric whip) until they start to froth; add the cream, milk and vanilla, and the rum. Pour the mix into 4 oven molds, cook in oven at 90° for 1 hour. Serve with a sprinkling of cinnamon and cocoa powder.
