This is the coldest week of the
year, and the three last days of the month, known as "the days
of the blackbird", are according to folklore the very coldest.
According to a folk legend once upon a time blackbirds were white. At the end of January, seeking respite from the cold a female blackbird took refuge for three days in a chimney.
She survived the intense cold but her feathers turned black because of the smoke; since then blackbirds are black.

Golden ricotta

350 g./ 1/3 lb. Roman ricotta -
3 whole eggs - 3 tbsp. superior quality white flour - 1 tsp.
salt - 3 tbsp. parsley - 1 tbsp. finely chopped capers - olive
oil for frying.

In a bowl squash the ricotta with
a fork and add the other ingredients mixing well. Leave to rest
in the refrigerator for an hour. Heat the oil and with the aid
of a tablespoon turn the mix into small dumplings and drop in
the oil a few at a time. When golden, dry on kitchen roll and
serve hot.
