Saint Valentine: this day can mean friendship, affection, love or passion, according to which country you are in. In Latin countries, Saint Valentine is of course the day of celebration for lovers and this week's menu is light, spicy, and has an aphrodisiac touch so that eating will be just one of the evening's pleasures.

   Almond pudding

150 g./5 oz. bread without crust - 50 g./2 oz. shelled, finely chopped almonds - 50 g./2 oz. sugar - 50 g./2 oz. butter - 1 egg and 1 egg white - 4 dl. milk - grated bread - salt


Soak bread in milk and squash with a fork. Beat the egg yolk with sugar, the chopped almonds and the melted butter, add bread and egg whites whipped until stiff with a pinch of salt. Pour into an oven mold greased with butter and sprinkled with grated bread; cook at 180° for an hour and a quarter. Serve lukewarm or cold.

N.B. Ingredients are given for 2 portions.

Pinot Brut Blanc de Blancs
Santa Margherita


Smooth, dry sparkling wine with almond notes. Refined bouquet with hint of hawthorn, very fine and consistent perlage.

Serve cool at:
8°-10° C.
