Saint Valentine: this day can mean
friendship, affection, love or passion, according to which country
you are in. In Latin countries, Saint Valentine is of course
the day of celebration for lovers and this week's menu is light,
spicy, and has an aphrodisiac touch so that eating will be just
one of the evening's pleasures.

Cream of seafood

200 g./7 oz. prawns - 200 g./7
oz. sea crab - 50 g./2 oz. shrimps - 50 g./2 oz. onion - 50
g./2 oz. leeks - 1 medium sized tomato - 1 carrot - pinch paprika
- bay leaf - thyme - tarragon - 30 g./1 oz. flour - 1 cup wine
- 1 cup cognac - fish stock - oil

Chop up the vegetables and herbs and place in hot oil in a pan; gently fry and when they are slightly browned add the wine, cognac and flour. Let the liquid evaporate over the heat and add the tomato, fish stock, prawns, sea crab and shrimps. Cook for 30 minutes over a medium flame. Remove from heat, sieve and serve hot, with croutons if you wish.
