For Christmas morning think of a totally different breakfast from usual: you can prepare it the evening before, and set the table for Santa Claus and his reindeers. Together with your child make brightly colored place names for your guests. For Santa Claus it's easy, but if, like everyone else, you can't remember the names of the reindeers, they are Dasher, Dancer, Prancer, Vixen, Comet, Cupid, Donder, Blitzen and... Merry Christmas!

Truffle liver

100 g./3 1/2 oz. veal liver - 100
g./3 1/2 oz. chicken liver - 100 g./3 1/2 oz. duck liver - 100
g./3 1/2 oz. butter - 1/2 cup white wine - 1 cup Marsala - 4
tbsp. cream - 1 bayleaf - 1 onion - salt and pepper - 50 g./2
oz. white truffle cream

Beat eggs in a bowl with Parmesan,
grated bread, lemon zest and a pinch of nutmeg. Bring stock
to boil in a pan and pour in egg mix. Boil for a few minutes,
stirring with a hand whisk and serve hot.
N.B. Ingredients are given for 4 portions.

Santa Margherita
Sparkling wine with dry,
velvety texture, with hint of almond. Dry bouquet with
hints of ivy and ultra-fine, lingering perlage.
Serve at:
8°-10° C.
