
200 g./7 oz. peeled almonds - 300 g./3/4 lb. superior quality white flour - 150g./5 oz. castor sugar - 2 eggs - a few drops of almond essence and orange or lemon blossom - salt

Blend almonds, beat sugar with egg and very gently warm mixture over a low flame. Remove from flame and whisk, adding flour, almonds and essence. Spread mixture as if it were a pastry and using special molds create different shapes. Brush with egg white, decorate with colored grains or with different colored icing sugar or melted chocolate, and bake in oven at 250° for 10'.
