"There is no such thing as Easter
without any eggs" goes a popular saying: because this food is
the symbol of the renewal of life, the very essence of springtime,
the fertility of the land, hope in the future. Easter cooking
is based on eggs, lamb (or kid), herbs and root vegetables,
symbols of the cycles in each season.

Dove pastry |  |

3 packs frozen pastry - strawberry
and apricot jam - fresh strawberries and apricots - 1 egg yolk
- grated bread - butter

Defrost pastry and roll 3 layers
not too thinly with a rolling-pin. With a dove-shaped mold cut
3 dove shapes from the pastry; line a baking-tin with butter
and spread with grated bread. Delicately arrange the first dove
shape and spread apricot jam on it, place a few slices of fresh
apricot on it, spread with another layer of jam; cover with
the second dove, and spread as above but with strawberry jam
and fresh strawberries. Close with the last dove, spread with
egg yolk. Place in oven heated to 190° for 25-30 minutes.
