Santa Margherita purchases grapes from regular suppliers who utilise the technical support of company personnel. The area of cultivation is located in the eastern part of Veneto. The soils are semi-rocky, alluvial, rich in lime and clay. The vineyards that produce the grapes for Versato are cultivated with the special espalier technique. The planting density are from 3,350 to 4,000 vines per hectare and average vine age is 15-20 years.
The grapes are harvested in late September. They are left on the skins for 10/12 days at a max. temperature of 28/30° C. The grapes are periodically stirred during this period to obtain optimal extraction of the anthocyanins and tannins contained in the skins. Alcohol and malolactic fermentation are completed in stainless-steel vats. In February part of the wine is transferred to smaller steel containers. The rest is placed in 225-liter French oak casks ageing. After this period, a blend is made of 50% casked and 50% non-casked wine. It is then aged in the bottle for at least three months before sale.
Tasting notes Intense, brilliant ruby-red color, with purple overtones. Nose full and persistent, delicate, elegant, with hints of morello cherries and plum tinged with vanilla and violet flowers. Taste is fresh, dry, balanced, velvety with character, slightly tannic. The careful selection and vinification result in a well-structured, harmonious wine.
