Chardonnay is one of the basic elements of our corporate philosophy along with Pinot Grigio and Müller Thurgau. The search for varietal characterization respecting three basic factors: territory - wine - man, has always represented a profound commitment for our oenologists. However, they have been able to interpret the evolution of taste in the wine sector, using the barrique as an instrument to give greater expression, as well as modernity, to the product, in full and logical continuity of a project initiated 15 years ago.
After harvesting, the grapes are stripped from their stalks and placed in stainless steel tanks where they are chilled. Soft pressing follows with decanting of the must, always at a low temperature, until the ideal degree of limpidity is attained. With the use of selected yeasts, one third of the total must is fermented in small barrels of French oak and two thirds in steel tanks at a controlled temperature of 18/20° C. (64/68° F.). Early in the following year, the two segments are blended and bottled.
Tasting notes The wine offers the eye an intense, crystalline straw-yellow color. The aroma is full and intriguing and rich in the fragrance of fruit with notes of pineapple in syrup, citrus fruits and white flowers. In the mouth, the flavor offers depth and persistence accompanied by an acidulous note that gives the wine vivacity and freshness. The finish is entirely dominated by notes of vanilla given by the oak and it is prolonged and stimulating.
Culinary suggestions Perfect with white meats and elaborate fish dishes, it excellently complements vegetable timbales and goat's milk cheeses.
