Impronta del Fondatore is Santa Margherita's tribute to its Founder, Count Gaetano Marzotto. The bases he laid for the company's success are reflected in the Pinot Grigio, the epitome of Santa Margherita's production. This wine is produced in limited quantities from the finest Pinot Grigio Alto Adige D.O.C. grapes, which are specially selected and set aside for this product.
The Pinot Grigio grapes are subjected to a soft pressing and the must is fermented at a temperature of about 16° C. (61° F.). It then undergoes malolactic fermentation. The wine, still on its lees from fermentation, matures for about six months in French oak and stainless steel in proportions of 1/3 and 2/3. The lees are stirred on a weekly schedule. In the spring following the harvest, the two portions of wine are blended and bottled. The wine fines for at least two months in the bottle before it goes on sale.
Tasting notes The wine features a dark straw yellow color. The intense bouquet is pleasantly fruity and flowery with notes of Golden apples and yellow fruit against a genteel boisé background. On the palate, it is warm and fat with a good structure and an agreeable balance between freshness and softness. The wine shows excellent persistence on the palate and the succession of aromas is in keeping with the sensations registered by the nose. This is a Pinot Grigio that can evolve toward more complex tones of fruit and dried flowers when laid down in the bottle for an extended period.
Culinary suggestions The wine combines with even elaborate dishes based on fish, vegetable molds and white meat preparations that are not too complicated.
