Dulcedo is derived from grapes of the Verduzzo Friulano variety, which has been grown for many years in eastern Veneto. However, it originated in nearby Friuli, where it has been cultivated from ancient times.
The grapes, picked manually after they have become slightly overripe on the vine, are placed in baskets with capacities of 7-8 kilos (15.4-17.6 pounds) each. Afterward, they are kept until November in a cool and airy room, where they lose about 30% of their weight with as a consequence concentration of their sugars and all their varietal aromas. The grapes are then soft-pressed and the must, drawn off the pressings, is fermented and matured for about 10 months in small oak casks. The wine fines in the bottle for at least four months before it goes on sale.
Tasting notes The brilliant yellow color with golden reflections seems to mirror the sunny character of the wine. At the base of the bouquet, a delectably honeyed, sweetish perception with tones of apricot jam and dried exotic fruit against a vanilla background. The palate immediately detects sweet, warm and soft sensations provided by a combination of alcohol and sugars but balanced by refreshing acidity, a component that gives Dulcedo remarkable equilibrium. A light vein of vanilla melds perfectly with fruity notes in pleasant succession. Powerful and at the same time delicate, the flavor transmits all its sweetness and complexity in a way that surprises.
Culinary suggestions The wine makes a superb match for cheeses, including herbed types, and foie gras. It is an ideal accompaniment for fruit pies, cream desserts and dry pastries.
