The Müller Thurgau grape was created by Dr Hermann Müller Thurgau from a cross between the Riesling Renano and Sylvaner vines. In 1986, Santa Margherita launched its semi-sparkling Müller Thurgau, which was immediately judged the finest in its class. Thanks to Müller Thurgau Santa Margherita, this previously little-known grape variety has become very popular in Italy.
The grapes are soft-pressed and active yeasts are added to the must. It is them fermented for 15-20 days at a controlled temperature of 16°-18° C. The resulting wine is transferred to pressure tanks, yeasts and rectified concentrated must are added and it is fermented until the desired pressure is reached. At this point the wine temperature is lowered to - 4° C. to halt the fermentation process.
