Refosco is one of the oldest and most characteristic Friuli grape varieties. It originally came from the Carso or Istria area and was already well-known in Roman times. The name, "from the red footstalk" derives from the unusual colour of this footstalk, the part of the stem to which the individual grapes are attached.
The must is left on the skins for 8/12 days than transferred to special tanks where the fermentation is completed in 8-10 days at 25°-30° C.
Tasting notes Ruby red color with violet highlights. Taste full and clean with slightly bitter aftertaste. Strong, characteristic nose with whiffs of cherries and blackberries along with a hint of sweet violets.
Culinary suggestions Well suited to flavourful pasta and rice dishes and vegetable soups. Excellent with beef, kid, lamb, liver.
