Sauvignon Blanc, originally from the Gironde, in the Bordeaux wine-growing area of France, produces some of the most popular dry white wines in the world. Its most prominent characteristic is the heady bouquet, which can generally be described as herby and musky, with undertones of green fruit.
The grapes are soft-pressed immediately on arrival at the winery and the resulting must is cooled to 10° C. and left to rest for 24 hours. Initiated with the addition of selected yeasts, fermentation is carried out at a controlled temperature of 18°-20° C. (64-68° F.) over a period of 15-20 days. The wine is then stored in stainless steel tanks and bottled in the first week of February.
Tasting notes A dry white wine with a straw yellow color and greenish reflections, it has an elegant structure and a full, fruity and floral bouquet with notes of elderberry flowers and honey. The flavor is rich and fragrant with a persistent finish accompanied by refreshing acidity.
Culinary suggestions Superb with dishes based on fish, seafood and crustaceans, it also complements white meats, air-cured ham and delicately prepared vegetables.
