A variety native to Burgundy, Pinot Nero is widely recognized for its capacity to attain excellent levels of refinement. In the Alto Adige, it has found ideal soil-climatic conditions and its cultivation is now so deeply rooted that Pinot Nero has become a classic of the Alto Adige's wine sector.
The grapes harvested in the first half of September are destalked and pressed and the must, in contact with the skins, is cooled to 10° C. (50° F.). That temperature is maintained for about 24 hours. Fermentation occurs at 28° C. (82° F.). It continues for about 15 days and is followed by malolactic fermentation. In the initial months of the year following the harvest, part of the wine is placed in small oak casks for about seven months. The rest continues to mature in stainless steel. When the two portions are blended, the wine is bottled and fined in glass for at least four months.
Tasting notes Santa Margherita Pinot Nero displays a young, fragrant and fruity style that is in keeping with the zone's production tradition. At the same time, however, it has a good structure and body so that it develops greater complexity through maturation in small oak barrels. The color is a ruby red that resembles the tints of wild berries. The bouquet offers scents of red and black currants in combination with genteel notes of vanilla. The flavor is dry with a good, elegantly balanced structure that lacks all roughness. It is rich and fine on the palate. The influence of the wood is well calibrated and never overwhelms the wine's elegant fruity tones.
Culinary suggestions The wine accompanies dishes based on red meats and game as well as cured meats and mild, moderately aged cheeses.
