An illustrious expert on vines, Dr. Hermann Thurgau identified the variety that now bears his name, Müller Thurgau, as a result of his viticultural studies and research in clonal selection. The variety is a cross between Riesling and Sylvaner. It is widely diffused in the Alto Adige, where it has found an ideal habitat for the development of its character.
The partially crushed grapes are left to macerate for 14 hours at 4° C. (39.2° F.) and then soft-pressed to separate the must from the pomace. Fermentation lasts 15-20 days at a controlled temperature of 18°-20° C. (64-68° F.). The spontaneous fining and cold stabilization processes occur in stainless-steel tanks and continue until bottling in early February.
Tasting notes Santa Margherita Müller Thurgau is a dry, harmonious wine of a straw yellow color with greenish reflections. It has a highly special aromatic content with notes of white flowers and nettles. The flavor is delicate, pleasantly varietal and persistent. It has a nimble and elegant structure.
Culinary suggestions Ideal with dishes based on fish, seafood and crustaceans that are not too elaborate. It also makes a fine match for delicately cooked white meats and vegetables.
