Duck with orange

Ingredients:
1 duck
1 glass dry white wine
4 oranges
2 tablespoons of brandy
2 ladlefuls of rich stock
1/2 lemon
1 tablespoon of sugar
butter

Preparation:
Prepare the duck for cooking, tie it up and season it with salt and pepper. Put it in a casserole with a knob of butter and brown it on all sides. Baste with the wine, the juice of 2 oranges and the ½ lemon and the stock and put it in the oven at 200° C. for 40 minutes.Peel the remaining oranges, cutting the zest into little strips and the pulp into slices. Scald the zest in boiling water and put it in a saucepan with the sugar, the brandy and a knob of butter. Caramelize these ingredients and pour this sauce over the duck, along with the slices of orange. After a few minutes remove it from the oven.
